It’s summertime and that calls for something light and refreshing to satisfy your hunger. Introducing my Summertime Veggie Wrap loaded with mouthwatering flavor and lots of colors.

Everyone always says for great health you need to eat the colors of the rainbow. This wrap delivers on that and much more. It tastes delicious, provides shades of red, yellow, green, and orange, and is the loaded with antioxidants and fiber.

It all starts with an oil-free, millet & flax spinach lavash wrap and my Lemon Garlic Hummus as a spread. The the veggies are packed in to load this wrap up with disease-fighting antioxidants, vitamins, and minerals. This is a favorite at summer picnics with friends and family of mine. I know it will be with yours too.

Now, time to dig in!

Summertime Veggie Wrap

Vegan Summertime Veggie WrapPrep time: 15 minutes
Servings: 5-6 wraps

Ingredients:
Millet & flax spinach lavash wraps (or any oil-free wrap)
Lemmon garlic hummus
3 plum tomatoes, diced
1 cucumber, sliced thinly
1 yellow bell pepper, chopped
1 carrot, grated
Spring mix (or other dark leafy greens)

Directions:
Prepare all veggies and lemon garlic hummus. Take one wrap and spread a layer of hummus over it. Add small amount of all the veggies onto wrap, being careful to not overfill. Roll your wrap up and cut down the middle. Enjoy!
